Cool, creamy black bean soup

Yield: 4 servings

Measure Ingredient
4 cups Black beans, rinsed and drained (3-15 oz cans)
1½ cup Plain non-fat yogurt
1 can Mild peeled green chilies (4 1/2 oz)
2 teaspoons Cumin
½ teaspoon Balsamic vinegar or lemon juice
\N \N Salt to taste
\N \N Pepper to taste
1 tablespoon Snipped chives or sliced green onions

Puree all ingredients but chives or onions in blender or food processor. Serve cold, topped with a dollop of yogurt and sprinkled with chives or onions.

Per serving: 292 calories, 21 grams protein, 51 grams carbohydrates, 16 grams fiber, 1 gram fat, 337 milligrams sodium.
