|2 tablespoons||Salad oil|
|1 tablespoon||Minced garlic|
|2 tablespoons||Dau see; (Chinese salted black soy beans), rinsed and chopped|
|½ cup||Chicken broth|
|1 tablespoon||Oyster sauce; (Chinese oyster-flavored sauce)|
|½ teaspoon||Soy sauce|
|½ teaspoon||Sesame oil|
|½ cup||Chopped green onions|
|Chinese parsley; (cilantro)|

Thoroughly wash clams; drain. In a wok or skillet, heat the salad oil; brown garlic. Stir in black beans. Add clams and stir-fry for 1 minute. Add broth, oyster sauce, sugar, soy sauce, and sesame oil; cover and cook for about 1 minute. Combine cornstarch and water. When clams are open, thicken sauce with cornstarch mixture. Add green onions before serving. Garnish with Chinese parsley. Makes 4 servings.
