Chilled cucumber~ yougourt & mint soup

| 1 | medium | Onion, diced |
| 1 | English cucumber, diced | |
| 3 | cups | Chicken broth |
| 2 | cups | Plain yogurt |
| Salt & pepper to taste | ||
| ¼ | cup | Fresh mint, chopped |
Directions
Saut onion until golden. Stir in cucumber and cook 2 minutes. Add chicken broth and cook covered for 15 minutes. Cool slightly and pure in a blender. Chill. Stir in yogurt, mint, and salt & pepper.
