Chickpeas with tomatoes and rice

1Onion; chopped
1Garlic clove; chopped (opt)
4tablespoonsVegetable oil
2cupsTomatoes; crushed
2cupsGarbanzos; cooked
2cupsBrown rice; cooked
Salt, pepper, other seasonings to taste

Directions

Saute onion and garlic in oil. Add tomatoes and simmer for 15 minutes, uncovered. Add garbanzos, rice, salt, pepper and other seasonings. Simmer for 10 minutes.
