Yield: 4 Servings
|1 tablespoon||Vegetable oil|
|2 pounds||Skinless chicken pieces|
|1 teaspoon||Ground cumin|
|¼ teaspoon||Each salt, pepper and hot pepper flakes|
|3||Cloves garlic, minced|
|2 teaspoons||Lemon or lime juice|
|¼ cup||Chopped fresh coriander or parsley|
In large nonstick, heat oil over medium-high heat; brown chicken on all sides.
Sprinkle cumin, salt, pepper and hot pepper flakes over chicken. Add 1 cup water, garlic, cloves and lemon juice. Reduce heat, cover and simmer for 15 minutes. Discard cloves. Remove chicken to platter; keep warm.
