Chicken sofrito

Yield: 2 Servings

Measure Ingredient
2 cloves Garlic crushed.
14 ounces Tinned chopped tomatoes
1 ounce Cooked ham cut into strips.
¼ teaspoon Salt.
3 ounces Green pepper de-seeded and chopped.
6 ounces Chicken stock
9 ounces Skinned and boned chicken breasts cut into half inch strips.

Place all the ingredients except the chicken in a pan. Mix well and cook gently for 15 minutes stirring occasionally. Add the chicken and continue to cook until the chicken is cooked thoroughly and the sauce thickens.
