6Chicken Breast;boned, skinne
4tablespoonsOlive Oil
2tablespoonsButter
½cupBlack Olives;chopped
2Anchovies;minced;fillets
1Garlic;minced;clove
½cupWhite Wine
2cupsTomato;chopped
2tablespoonsBasil;chopped fresh

Directions

In large skillet heat butter and oil. Saute chicken on both sides until brown. Remove from pan.

In same skillet swirl wine; add garlic, tomatoes, anchovy, olives and basil. Simmer 5 minutes.

Add chicken, cover, simmer until tender, about 30 minutes.
