Chicken and cortland apple couscous

Ingredients

2cupsCoarsely chopped cooked chicken
2cupsDry couscous
cupBoiling chicken stock
½cupGolden raisins
½cupToasted slivered almonds
2Cortland apples, peeled, cored and coarsely chopped
¼cupUnsalted butter, but into small pieces
½teaspoonGround coriander seeds
¼teaspoonGround cinnamon
teaspoonGround cloves

Directions

Preheat oven to 400F. Combine all ingredients in a 9x13x2 inch glass baking pan. Cover with foil and bake for 25 minutes.

Serves 4.
