Chicken 'ossobuco'

Yield: 8 Servings

Measure Ingredient
8 \N Boneless chicken breast
¾ cup Butter or margarine
8 larges Tomatoes, peeled, chopped
3 tablespoons Parsley, chopped
½ cup Flour
¾ cup Dry white wine
2 larges Garlic cloves, crushed
1½ teaspoon Grated lemon rind
\N \N Salt/pepper

Dredge chicken in flour seasoned with salt and pepper. Melt butter in large sauce pan; add chicken and brown on both sides. Add wine and cooke over low heat for 10 minutes. Add tomatoes and garlic. Cover and simmer until chicken is fork tender. Before serving, sprinkle with lemon rind and chopped parlsey.
