Cattle kings' ranch hand chicken soup

2tablespoonsOlive oil
½cupChopped carrots
½cupChopped celery
½cupChopped red onion
½cupChopped zucchini
½cupChopped yellow squash
1cupCooked rice
Salt, to taste
Black pepper,to taste
4Sprigs of chopped cilantro leaves for garnish

Directions

Bring stock to a boil in a large pot. In a separate large pot, heat oil and saute carrots, celery, onion, zucchini and yellow squash. Add boiling stock to vegetables, then stir in rice; season with salt and pepper. Ladle into bowls and top with cilantro.
