|6 eaches||Cornish game hens|
|4 tablespoons||Melted butter|
|1 cup||Blackberry jam|
|2 tablespoons||Dijon-style mustard|
|Salt and pepper|
Preparation 10 minutes Bake 1 hour Serves 6 Preheat oven to 425. Rub hens inside and out with salt, pepper, and lemon juice. Coat hens with butter and place in preheated oven.
Reduce heat after 20 minutes to 350.
Prepare Glaze: Combine all remaining ingredients, except berries and simmer until jam has melted and sauce is glossy. After 25 minutes remove birds from oven. Coat each bird with glaze. Return to finish cooking. Brush frequently for the remaining 15 minutes. Just before serving, gently stir berries into glaze. Spoon over birds. Pass remaining glaze separately.
