½ cup | Onion -- chopped |
½ cup | Frozen peas -- thawed |
½ teaspoon | Salt |
½ teaspoon | Sugar |
2 tablespoons | White vinegar |
3 tablespoons | Bacon -- cooked & crumbled |
Core and cut tomatoes into ¾" cubes; place in large bowl. Cut potatoes into ¾" cubes; add to tomatoes. In medium skillet heat oil until hot. Add onion; saute about 5 minutes. Stir in peas, salt, sugar and vinegar; pour over tomato mixture, tossing gently.
Sprinkle with bacon. Serve warm.
