Warm tomato, bacon & potato salad

Yield: 8 servings

Measure Ingredient
2 larges Tomatoes
8 ounces Potatoes -- cooked &
Peeled
2 tablespoons Oil
½ cup Onion -- chopped
½ cup Frozen peas -- thawed
½ teaspoon Salt
½ teaspoon Sugar
2 tablespoons White vinegar
3 tablespoons Bacon -- cooked & crumbled

Core and cut tomatoes into ¾" cubes; place in large bowl. Cut potatoes into ¾" cubes; add to tomatoes. In medium skillet heat oil until hot. Add onion; saute about 5 minutes. Stir in peas, salt, sugar and vinegar; pour over tomato mixture, tossing gently.

Sprinkle with bacon. Serve warm.
