Warm salad of mustard greens, stilton and pancetta

Yield: 4 servings

Measure Ingredient
¼ cup Fruity olive oil
1 tablespoon Whole yellow mustard seeds
½ cup Minced onion
2 teaspoons Minced garlic
¼ cup White balsamic vinegar
½ cup Peeled; diced tart sweet apple such as
\N \N Gala
\N \N Salt; to taste
\N \N Freshly-ground black pepper; to taste
1 pounds Young tender mustard greens; tough stems removed
¼ pounds Pancetta; thinly sliced,
\N \N ; and lightly browned
3 ounces Stilton cheese; crumbled

Add oil and mustard seeds to a nonstick skillet over moderate heat and cook until mustard seeds begin to pop (cover if necessary). Add the onion and garlic and cook until soft but not brown. Stir in the vinegar and apple and season to taste with salt and pepper. Pour over mustard greens and toss with pancetta and Stilton. Serve immediately. This recipe yields 4 servings.
