Warm salad of mustard greens, stilton and pancetta

Ingredients

¼cupFruity olive oil
1tablespoonWhole yellow mustard seeds
½cupMinced onion
2teaspoonsMinced garlic
¼cupWhite balsamic vinegar
½cupPeeled; diced tart sweet apple such as
Gala
Salt; to taste
Freshly-ground black pepper; to taste
1poundsYoung tender mustard greens; tough stems removed
¼poundsPancetta; thinly sliced,
; and lightly browned
3ouncesStilton cheese; crumbled

Directions

Add oil and mustard seeds to a nonstick skillet over moderate heat and cook until mustard seeds begin to pop (cover if necessary). Add the onion and garlic and cook until soft but not brown. Stir in the vinegar and apple and season to taste with salt and pepper. Pour over mustard greens and toss with pancetta and Stilton. Serve immediately. This recipe yields 4 servings.
