Yield: 2 Servings
|10 ounces||Boneless beef round|
|2 teaspoons||Light margarine|
|½ cup||Onion; chopped|
|1||Garlic clove; minced|
|1½ teaspoon||White vinegar|
|¼ teaspoon||Ground turmeric|
|⅛ teaspoon||Ea: cumin; ground ginger|
|⅛ teaspoon||Ea: dry mustard; red pepper|
|⅛ teaspoon||Ea: black pepper; salt|
|2 tablespoons||Lemon juice|
|1 cup||Cooked white rice; (hot)|
On rack in broiling pan, broil steak, turning once, until rare; cut into 1-inch cubes. In 1 qt saucepan, heat margarine until bubbly; add onion & garlic and saute until onion is translucent. Add vinegar & seasonings and stir to combine; add steak and cook, stirring frequently, for 3 minutes.
Stir in water, cover pan, and let simmer, stirring occasionally, until meat is tender, about 1 hr. Stir in lemon juice and serve over rice.
