Vindaloo beef curry

Yield: 2 Servings

Measure Ingredient
10 ounces Boneless beef round
2 teaspoons Light margarine
½ cup Onion; chopped
1 \N Garlic clove; minced
1½ teaspoon White vinegar
¼ teaspoon Ground turmeric
⅛ teaspoon Ea: cumin; ground ginger
⅛ teaspoon Ea: dry mustard; red pepper
⅛ teaspoon Ea: black pepper; salt
¾ cup Water
2 tablespoons Lemon juice
1 cup Cooked white rice; (hot)

On rack in broiling pan, broil steak, turning once, until rare; cut into 1-inch cubes. In 1 qt saucepan, heat margarine until bubbly; add onion & garlic and saute until onion is translucent. Add vinegar & seasonings and stir to combine; add steak and cook, stirring frequently, for 3 minutes.

Stir in water, cover pan, and let simmer, stirring occasionally, until meat is tender, about 1 hr. Stir in lemon juice and serve over rice.
