Traditional anise biscotti

Measure Ingredient
1⅓ cup Sugar
2 teaspoons Baking powder
2 tablespoons Butter; softened
2 tablespoons (a 1 oz. bottle) anise extract
3 \N Eggs
2¼ cup All purpose flour
1 \N Egg plus
1 teaspoon Water; beaten together for an egg wash

Preheat oven to 325x. Combine the sugar, baking powder, margarine and eggs.

Blend in the bottle of extract. Add the eggs and the flour, one cup at a time. Add a bit more if the dough is too moist to form into logs. Spoon dough onto a greased cookie sheet and shape into two logs about 12 inches long by 1-½ inches wide. Brush the logs with egg wash and bake for 20 minutes. Remove from the oven and cool briefly. Cut the logs diagonally into slices 1 inch thick. Turn each biscotti on its side and bake for 15 minutes more at the same temperature.
