Summer greens soup

Ingredients

2Cloves garlic, minced
½cupChopped green onions
4cupsChicken stock
3cupsChopped lettuce (Boston or
Bibb)
3cupsFresh or frozen green peas
3cupsChopped fresh spinach
cupChopped fresh parsley
3tablespoonsChopped fresh basil
1tablespoonLemon juice
Salt and pepper

Directions

In 12 cup microwaveable casserole, microwave oil, garlic and onions at High for 2 minutes.

Add stock, lettuce, peas, spinach, parsley and basil; cover and microwave at High, stirring occasionally, for 12 to 14 minutes or until spinach is tender.
