Sour shrimp soup

1 \N Slice dried galanga, soaked
\N \N For 20 minutes
3 \N Stalks fresh lemon grass,
\N \N Bruised
2 \N Kaffir lime leaves
2 mediums Stalks coriander with roots
5 \N Guinea peppers lightly
\N \N Pounded w/ mortar
1 tablespoon Roasted chili sauce
6 cups Chicken stock
10 ounces Med shrimp, shelled
1 ounce Straw mushrooms
2 tablespoons Fish soy
1½ tablespoon Sugar
\N \N Lemon juice

Place all soup ingredients except last 3 in a pot over medium heat and boil for 5 minutes. Add the shrimp and mushrooms and just return to a boil. Mix in seasonings. Garnish with green onion
