Roasted rack of lamb with garlic and herbs - bon appetit

Ingredients

| 2 | tablespoons | Dried oregano |
| 2 | tablespoons | Dried thylme |
| 1 | tablespoon | Fennel seeds |
| 1 | tablespoon | Dried rosemary |
| 1½ | teaspoon | Dried rubbed sage |
| ¼ | cup | Olive oil |
| 2 | tablespoons | Chopped garlic |
| 2 | 1 1/2-lb racks of lamb | |
Directions
Preheat oven to 400F. Combine first 5 ingredients in small bowl.
Combine oil and garlic in another small bowl. Rub oil mixture over each lamb rack. Season generously with salt and pepper. Press 3 T spice mixture all over each lamb rack. Place lamb in baking pan.
Roast until thermometer inserted into center registers 135F for medium-rare, about 20 minutes. Transfer lamb racks to platter and let stand 5 minutes.
Carve lamb into individual chops, arrange on platter and serve.
