Quelites (spinach and pinto beans)

Ingredients

1tablespoonCrushed red New Mexican chile; seeds included
poundsFresh lamb's quarters or spinach
3tablespoonsChopped onion
2tablespoonsBacon fat or vegetable shortening
½cupCooked pinto beans
1teaspoonVinegar

Directions

Cook the spinach, drain, and chop. Saute the onion in the oil until soft.

Add the other ingredients and continue to saute for 5 to 10 minutes.

Serves: 4 to 6
