Pan-fried ropa vieja

Ingredients

| ½ | pounds | Flank steak; | 
| Vegetable oil spray; | ||
| ½ | medium | Onion; sliced | 
| 2 | Carrots; thinly sliced (1 c) | |
| 2 | cloves | Garlic; crushed | 
| ½ | medium | Green pepper; sliced | 
| 1 | can | (4.5 oz) whole tomatoes; | 
| 1 | teaspoon | Dried oregano; | 
| ½ | cup | Sliced pimentos; | 
| Salt & pepper to taste; | ||
Directions
Cut meat into paper-thin slices.  Spray a medium-size nonstick skillet with vegetable oil spray.  Saute meat 2 minutes.  Remove to a plate. In same pan, saute onions and carrots 5 minutes.  Add garlic and green pepper and saute 5 more minutes.  Add tomatoes and oregano. 
Break up tomatoes with a spoon as they cook.  Simmer 5 minutes.
