Pan-fried ropa vieja

2 ceppa kin

Ingredients

½poundsFlank steak;
Vegetable oil spray;
½mediumOnion; sliced
2Carrots; thinly sliced (1 c)
2clovesGarlic; crushed
½mediumGreen pepper; sliced
1can(4.5 oz) whole tomatoes;
1teaspoonDried oregano;
½cupSliced pimentos;
Salt & pepper to taste;

Directions

Cut meat into paper-thin slices. Spray a medium-size nonstick skillet with vegetable oil spray. Saute meat 2 minutes. Remove to a plate. In same pan, saute onions and carrots 5 minutes. Add garlic and green pepper and saute 5 more minutes. Add tomatoes and oregano.

Break up tomatoes with a spoon as they cook. Simmer 5 minutes.
