Oven roasted carnitas

Measure Ingredient

Cut fresh pork shoulder into small, even cubes and sprinkle with salt and pepper. [Optionally marinade in something fruity/spicy before cooking -JW]. Place the meat on cookie sheets and cook in a very slow oven [200 F] for up to 2 hrs- until the cubes are crisp.
