Onion "caviar"

Yield: 4 servings

Measure Ingredient
1 cup Chopped sweet onions
1 cup Black-eyed peas, cooked
¼ cup Pimento, diced
1 cup Green bell pepper, diced
½ cup Green onion, chopped
2 tablespoons Fresh garlic, chopped
¼ cup Italian dressing
Salt & pepper

Combine all the ingredients & let marinate overnight. Serve either as an appetizer or as a side dish.
