Normandy chicken with apples

Ingredients

QuantityIngredient
3cupsApple cider (I used fresh from the cider mill)
3Boxes (1.8 ounce) leek soup mix (like Knorr's)
2teaspoonsDried thyme
½teaspoonGrated nutmeg
poundsRed new potatoes, peeled and diced (I didn't bother peeling though)
4Celery ribs, thinly sliced
6Green onions, thinly sliced
3Apples, cored and cut into 16 wedges each
¾cupDried cranberries
2poundsSkinless, boneless chicken breast halves, halved crosswise

Directions

In crockpot (at least 4-5 quart), combine the cider, dry soup mix, thyme and nutmeg. Stir to blend. Add potatoes, celery, green onions, apples and cranberries. Tuck the chicken down into the mixture. Cover and cook on low at least 8 hours, making sure the potatoes are tender.
