My family oyster soup

Ingredients

¼ | cup | butter |
3 | tablespoons | flour |
½ | cup | shallots, chopped |
36 | eaches | oysters, medium |
2 | cups | oyster liquor |
¼ | cup | shallot tops, finely choped |
½ | teaspoon | thyme |
1 | each | bay leaf |
2½ | cup | milk, warm |
1 | salt & pepper to taste | |
1 | parsley, chop fine/to taste |
Directions
Cook flour and butter until bubbly. Add white onions and fry until wilted.
Add oysters, liquid, green onions, thyme and bay leaf and cook until oysters curl at edges. Pour in warm milk and heat; do not boil. Salt and pepper, add parsley garnish. Source: New Orleans Times-Picayune 13 Apr 1975 Recipe date: 04/13/75
