My family oyster soup

Ingredients

¼cupbutter
3tablespoonsflour
½cupshallots, chopped
36eachesoysters, medium
2cupsoyster liquor
¼cupshallot tops, finely choped
½teaspoonthyme
1eachbay leaf
cupmilk, warm
1salt & pepper to taste
1parsley, chop fine/to taste

Directions

Cook flour and butter until bubbly. Add white onions and fry until wilted.

Add oysters, liquid, green onions, thyme and bay leaf and cook until oysters curl at edges. Pour in warm milk and heat; do not boil. Salt and pepper, add parsley garnish. Source: New Orleans Times-Picayune 13 Apr 1975 Recipe date: 04/13/75
