Lemon sole with chilled prawn and watercress

1200 gram car natural Greek yogurt
2tablespoonsMayonnaise
1tablespoonHorseradish or mild mustard
175 grams bag watercress; chopped
125gramsPrawns; defrosted, drained
; and roughly chopped

Salt and freshly ground black pepper
1tablespoonOlive oil
25gramsButter; (1oz)
4tablespoonsPlain flour
8Fillets lemon sole; defrosted

Directions

Place the yogurt in a bowl with the mayonnaise, horseradish or mustard, watercress, prawns and seasoning mix well and chill until required.

Heat the oil and butter in a frying pan.

Mix together the flour and seasoning on a plate and use to coat both sides of the fish.

Cook the fish in batches and serve with the prawn and watercress sauce.

Notes Delicious served with extra watercress or mixed salad leaves and new potatoes.
