Karithopita (athenian walnut cake)

Yield: 1 Servings

Measure Ingredient
½ cup (1 stick) sweet butter at room temperature
1 cup Sugar
3 \N Eggs, slightly beaten
2 teaspoons Baking powder
1 teaspoon Ground cinammon
1 pinch Salt
2 cups Flour
2 cups Chopped walnuts
2 cups Honey
1 cup Water

SYRUP

1. Preheat the oven to 350 degrees F.

2. Beat the butter and sugar with a wooden spoon. Add the eggs.

3. Stir the baking powder, cinnamon, salt and flour together and mix in the butter mixture until soft and pliable.

4. Add the walnuts and bake in a greased loaf pan 30 to 35 minutes or until the top is golden brown.

5. To make the syrup, boil the honey and water 5 minutes and pour over the warm cake. Let stand 1 hour before serving.
