Ingredients

| 5 | Feet medium hog casings | |
| 5 | pounds | Goose meat-15% fat |
| ½ | cup | Drambuie |
| 2 | teaspoons | Salt, or to taste |
| 2 | teaspoons | White pepper |
| ½ | cup | Very finely chopped onion |
| ¼ | cup | Chopped fresh chives |
| 1 | teaspoon | Mace |
| 1 | teaspoon | Ground coriander |
| ½ | teaspoon | Cayenne pepper |
| 1 | teaspoon | Sweet paprika |
Directions
Prepare the casings. Grind goose through the coarse disk, combine with Drambuie and refrigerate at least three hours. Mix with remaining ingredients; grind using fine disk and stuff into casings. Twist off into 3-4" links. Saute in vegetable oil until evenly browned and cooked through.
