Fresh pasta with cheese and parma ham

25gramsPlain flour; (1oz)
450millilitresMilk; ( 3/4 pint)
50gramsParmesan cheese; grated (2oz)
Salt and freshly ground black pepper
170 grams pac Parma ham; sliced (3oz)
1500 gram bag tagliatelle verdi; (1lb)
25gramsPine nut kernels; toasted (1oz)

Directions

Melt the butter in a saucepan, add the flour and cook for 1 minute, stirring occasionally. Remove from the heat and gradually stir in the milk.

Return to the heat and bring to the boil, stirring continously. Remove from the heat, add 25g (1oz) of the cheese and season to taste.

Gently stir in the Parma ham.

Meanwhile cook the pasta following instructions on the pack, drain quickly.

Mix well with the cheese sauce. Transfer to a warmed serving dish, sprinkle over the pine nuts and remaining parmesan cheese.
