Focaccia bread topping

Ingredients

6tablespoonsExtra virgin olive oil
4tablespoonsBalsamic vinegar
1Clove garlic, minced
Salt
Freshly ground pepper
¼poundsCherry tomatoes, yellow, halved
¼poundsCherry tomatoes, red, halved
6ouncesSmoked mozzarella or scamorza, coursely grated
¼cupBasil leaves, thinly sliced

Directions

PREPARATION: In a bowl, whisk together the oil, vinegar and garlic. Season with salt and pepper. Add cherry tomatoes & toss together. Leave at room temperature. Can be prepared several hours ahead. Heat broiler. Place cheese on top of focaccia or half loaf of It. bread (toasted) or slices of toasted bread. Place under broiler until cheese is melted and crust is golden. Remove from oven and top with tomato mixture and basil. Serve immediately
