Enchiladas, sante fe style

Ingredients

| 2 | cans | Enchilada sauce |
| 1 | can | Water |
| 1 | teaspoon | Ground cumin |
| 1 | teaspoon | Salt |
| ½ | teaspoon | Garlic powder |
| 1 | small | Head lettuce; shredded |
| 1 | medium | Onion; chopped |
| 1½ | cup | Grated Cheddar cheese |
| 12 | Corn tortillas | |
Directions
Brown beef, drain off excess fat. Add sauce, spices & water; simmer several hours until thick & smooth. Heat fat (bacon grease adds good flavor); dip tortilla in fat until soft. Layer tortilla, sauce, lettuce, cheese & onion (make stacks 3 or 4 high). Top with fried egg if desired. Makes 3-4 servings.
