Crawfish beignets

Yield: 4 Servings

Measure Ingredient
2 pounds Crawfish tails, whole and
Chopped
2 cups Bacon Mirepoix
2 cups Pepper cheese, shredded
2 cups Cheddar/monterey jack cheese
Shredded
Buttermilk
6 Eggs
1 teaspoon Seasoned salt

Mix first 4 ingredients together. Scoop and form triangles. Flour, dip in batter, flour again and fry until golden. Batter is 2 cups buttermilk, 6 eggs and 1 teaspoon seasoned salt.
