Cheesecake ( irish cream )^

Yield: 16 servings

Measure Ingredient
1¾ cup Finely crushed chocolate
\N \N Wafers or graham crackers
6 tablespoons Melted butter
1 cup Sugar
3 packs Cream cheese, (24oz),
\N \N Softened
4 \N Eggs
⅓ cup To 1/2 Bailey's*
¾ cup Mini chocolate chips
1 teaspoon Glour
\N \N Whipped cream
\N \N Chocolate curls




Preheat oven to 375F.

Combine crust ingredients and press onto bottom and up sides of lightly greased 9" springform pan; set aside.

Beat cream cheese and sugar until very smooth and creamy. Do not overbeat. Stir in Bailey's by hand. Gently stir in combined teaspoon flour and ½ cup chips.; stir into batter gently. Sprinkle remaining chips over.

Bake 45-55 minutes or until firm to the touch. Loosen sides of cheesecake by running a knife around edge of pan. Cover cake; chill at least 3 hours. Pipe with whipped cream and top with chocolate curls, if desired, before serving.
