Cashew cheddar roll

Yield: 8 Servings

Measure Ingredient
½ pounds Sharp cheddar cheese
½ cup Cashews
1 pack (4 oz) cream cheese
1 \N Clove garlic; minced
\N \N Paprika

Dust a sheet of waxed paper with paprika. In a food processor, finely grate the cheddar cheese. Grind the cashews. Process the cream cheese until soft.

In a large bowl, mix the cheese, cashews, and cream cheese together, and stir in the garlic. Shape the mixture into a 1½ inch roll. Roll on the waxed paper until thourughly coated with the paprika. Wrap the rolls in fresh waxed paper and refrigerate. Thinly slice to serve on round crackers.

NOTE: These rolls may be frozen, or they keep well in the refrigerator.

Makes one roll. Double the recipe as needed to make two rolls. One roll will serve between 8 and 10 people.
