Bulgur pilaf with tofu

| 2 | eaches | Cloves garlic |
| 1 | cup | Bulgur wheat |
| 1 | small | Onion, chopped |
| 2 | cups | Vegetable stock |
| ¼ | teaspoon | Oregano |
| dash | Of pepper | |
| 9 | ounces | Tofu |
| 2 | teaspoons | Soy sauce |
| 1 | each | Tomato, chopped |
| Parmesan cheese | ||
| dash | Of parsley | |
Directions
Melt butter in saucepan. Add bulgur, onion, and garlic and saute for 4 to 5 minutes. Remove garlic buds. Add stock, oregano and pepper, cover pan, and bring to a boil. Reduce heat and simmer for 15 minutes, or until all liquid is absorbed. Combine tofu and soy sauce in a small bowl and mash together, then stir into the cooked grain.
