Blitzkuchen (lightning cake)

Yield: 1 cake

Measure Ingredient
1 cup Butter -OR-
¾ cup Margarine
1 cup Sugar
4 \N Eggs
1½ cup Flour sifted WITH
1½ teaspoon Baking powder
\N \N Grated rind AND
\N \N Juice of 1 lemon
\N \N Sugar AND cinnamon

Cream butter and sugar. Add eggs one at a time. Beat well, add flour, lemon juice and rind and spread 1-inch thick on flat pan.

Sprinkle with a mixture of sugar and cinnamon ang bake 20 minutes at 350ø F.
