Barley and mushroom bake

Ingredients

Vegetable cooking spray
2teaspoonsLow-cal margarine
2cupsThinly sliced mushrooms
1cupChopped onion
1cupPearl barley, uncooked
cupHot water
teaspoonBeef bouillon
¼teaspoonSalt
teaspoonPepper
2tablespoonsParsley

Directions

Coat a large nonstick skillet with cooking spray; add margarine.

Place over medium heat until margarine melts. Add mushrooms and onions; saute until tender. Add barley, and saute 4-5 minutes or until barley is lightly browned. Remove from heat. Transfer barley mixture to a 1½ qt baking dish coated with cooking spray. Stir in water, bouillon,salt and pepper. Cover and bake at 350 for 1 hour and 15 minutes or until barley is tender and liquid absorbed, stirring every 15 minutes.
