Baked spinach egg "nests"

Yield: 4 Servings

Measure Ingredient
4 slices Canadian bacon
8 Fresh spinach leaves - approximately
4 teaspoons Butter
8 Eggs
Salt & pepper to taste
4 teaspoons Shredded cheddar cheese

Wash, dry, and remove stems from spinach. Stack leaves and roll up tightly, then slice in narrow strips. Put 1 teaspoon butter in each of 4-4oz baking cups. Add about ¼ of the spinach, then about ¼ of the bacon. Break 2 eggs on top of each nest, then top each egg with 1 teaspoon cheese. Place baking dishes on a cookie sheet and bake in a preheated 325 oven for approximately 15-20 minutes.
