|4 slices||Canadian bacon|
|8||Fresh spinach leaves - approximately|
|Salt & pepper to taste|
|4 teaspoons||Shredded cheddar cheese|
Wash, dry, and remove stems from spinach. Stack leaves and roll up tightly, then slice in narrow strips. Put 1 teaspoon butter in each of 4-4oz baking cups. Add about ¼ of the spinach, then about ¼ of the bacon. Break 2 eggs on top of each nest, then top each egg with 1 teaspoon cheese. Place baking dishes on a cookie sheet and bake in a preheated 325 oven for approximately 15-20 minutes.
