Ingredients

| 5 | Feet medium hog casings | |
| 5 | pounds | Woodchuck, cubed |
| 2 | teaspoons | Salt |
| 2 | teaspoons | Black pepper |
| 2 | cloves | Finely minced garlic |
| ½ | cup | Finely chopped onion |
| 1 | teaspoon | Dried rosemary, crushed |
| ½ | teaspoon | Sage |
| ½ | teaspoon | Thyme |
| 2 | tablespoons | Chopped parsley |
Directions
Prepare casings. Mix remaining ingredients, grind through the coarse diak, then through the fine disk. Stuff into casings, tie off into 3" links. Saute by vegetable oil.
