3 cups | Chopped cauliflower (1 md) |
2 cups | Chopped onion |
2 cups | Chopped green tomatoes |
2 cups | Chopped green peppers (4 md) |
1 cup | Chopped sweet red and yellow |

3 tablespoons | Salt |
2½ cup | White vinegar |
1½ cup | Sugar, or more to taste |
2 teaspoons | Dry mustard |
1 teaspoon | Tumeric |
½ teaspoon | Ground ginger |
2 teaspoons | Celery seed |
1 teaspoon | Mustard seed |
LIQUID:
Combine all of the chopped ingredients, sprinkle with the 3 T. of salt, mix lightly, let stand 4-6 hours in a cool place. Drain well.
Combine the ingredients for the liquid, simmer for 10 minutes.
Add the vegetables to the hot liquid, simmer 20-25 minutes. Bring to a boil. Seal with hot, sterilized, jars and lids, leaving ¼" headspace.
Note: you can use green or ripe tomatoes.
