Mexican meat balls

Yield: 4 servings

Measure Ingredient
500 grams Minced beef; (1lb)
500 grams Minced pork; (1lb)
2 \N Cloves garlic; crushed
50 grams Fresh white breadcrumbs; (2oz)
1 tablespoon Freshly chopped parsley
1 \N Egg; size 3
\N \N Salt and freshly ground black pepper
2 tablespoons Oil
1 \N 275 gram jar taco relish
50 grams Cheddar cheese; grated (2oz)

1. Mix together the meat and garlic, breadcrumbs, parsley, egg and seasoning and shape into 16 balls.

2. Heat the oil in a frying pan and fry the meatballs in batches to brown all over.

3. Transfer to an oven proof dish and pour over the taco relish. Cover and cook in a preheated oven 180 C, 350 F, Gas Mark 4 for 30 minutes.

4. Sprinkle over the grated cheese and place back in oven uncovered and continue cooking for a further 30 minutes.
