Tarragon cornish hens

Ingredients

| ⅓ | cup | Vegetable oil |
| 2 | eaches | Garlic cloves, crushed |
| Juice of 1 lemon | ||
| 1 | teaspoon | Dried tarragon |
| ¼ | teaspoon | Each of salt and white or black pepper |
Directions
Preheat oven to 375F. Split hens in half lengthwise. Place hens, skin side up, on a larg baking sheet with shallow sides. In a small bowl, whisk remaining ingredients togethers. Generously baste hens with mixture. Roast, uncovered, in centre of preheated oven for 40-45 minutes, basting frequently with oil mixture. Serves 2-4. Origin: Chatelaine Magazine, December/89.
