|1½ pounds||Small to medium size shrimp, frozen; thawed|
|6 ounces||Snow peas, frozen; thawed|
|Or a handful of fresh; blanched|
|6||Green onions; chopped|
|4 mediums||Tomatoes; peeled, chopped, and|
|¾ cup||Olive oil|
|¼ cup||Fresh parsley; chopped|
|⅓ cup||Wine vinegar|
|½ teaspoon||Garlic salt|
|½ teaspoon||Black pepper; coarsley ground|
Cook linguini according to package directions, omitting salt; drain. Rinse with cold water and drain again. Combine shrimp, linguini, and remaining ingredients; toss gently. Cover and chill at least 2 hours.
NOTES : If using fresh shrimp use 1½ pounds umpeeled medium size shrimp. Bring 5 cups water to boil; add shrimp and cook 3 to 5 minutes. Drain well; rinse with cold water. Chill. Peel and de-vein shrimp.
