Roasted red pepper couscous with capocollo

Olive oil
1Onion; finely chopped
4clovesGarlic; finely chopped
1cupRoasted red peppers; chopped
1cupParsley; chopped
½teaspoonRed pepper flakes
2cupsChicken broth
1cupCouscous
¼poundsCapocollo; finely chopped
Salt and pepper; to taste

Directions

Heat olive oil in large pan and saute onions until tender. Add garlic, red peppers, parsley and red pepper flakes, mixing together.
