Pappardelle with olive paste and gruyere

225gramsDried pappardelle (or other flat noodles)
1tablespoonOlive oil
4tablespoonsBlack olive paste
1tablespoonPine nuts
75gramsGruyere or Swiss cheese, grated on the fine side of the grater

Directions

Preheat oven to 200 C/400 F/Gas 6.

Cook the pasta for 6 min in boiling salted water. Drain. Pour the oil into a medium gratin dish and add the drained noodles. Toss the noodles in the olive oil and the olive paste. Cover with pine nuts and the grated cheese.

Bake for 15-20 min until the cheese has turned crispy and golden. The pasta on top is slightly crisp as well, underneath it is moist and fragrant.
