Directions

In a large skillet, saute the ground beef over medium-high heat for 7 to 8 minutes, or until crumbly and only slightly pink; drain off any excess liquid. Add the eggplant to the skillet and saute for 5 to 6 minutes, until NOTE: If you want to make this a day or two before serving, go ahead. Just put it together up to the point of placing the meat mixture into the baking dish. Then cover and refrigerate until ready to finish as directed above.
