Mom's mac nut waffles

Yield: 1 Servings

Measure Ingredient
2 larges Island eggs; separated
1¼ cup Half and half; or milk
1 teaspoon Almond extract
2 cups Cake flour; sifted
¼ cup Sugar
3 teaspoons Baking powder
¼ teaspoon Salt
6 tablespoons Butter; melted*
½ cup Macadamia nuts; chopped PLUS
Macadamia nuts; for garnish
Powdered sugar; for garnish
Maple syrup; pure, or coconut
Fresh strawberries; or mangos

* Please, NO margarine!!!

Beat egg yolks until light. Add milk and almond extract. Continue beating.

Sift the dry ingredients together and add to the egg yolk mixture. Add melted butter and continue to beat. Lastly, very gently fold in stiffly beaten egg whites. Bake in well heated waffle iron. Garnish with additional mac nuts and powdered sugar. Serve with pure maple syrup, coconut syrup or fresh fruit, such as sliced and sugared strawberries or mangos.
