Yield: 4 servings
|2 ounces||Muesli base or unsweetened muesli with|
|; the fruit removed|
|6 ounces||Mixed nuts; such as brazils,|
|; hazels and walnuts,|
|; finely ground|
|1 slice||Wholemeal bread; ground|
|1 medium||Onion; grated|
|1 teaspoon||Olive oil|
|2 teaspoons||Dried oregano or 2tbsps of fresh|
|1 teaspoon||Dried basil or 1tbsp of fresh|
|2 tablespoons||Soya sauce|
|Salt and freshly ground black pepper|
1. Mix all ingredients in bowl and leave to stand for 10 minutes.
2. Shape into rounds, make sure they will fit in bread rolls. Baste with olive oil during cooking and serve in bread rolls with onion rings and Capsicum and Peanut Salsa
Tips: Almonds and cashews are too delicate in flavour for this dish. Vary the herbs to suit availability. A little extra water may be needed to help binding of the mixture as the absorbency oF the bread and muesli will vary.
