Yield: 6 servings
|1½ pounds||Leeks (about 6 cups) washed, trimmed, and cut into 1 in. pieces|
|3 cups||Chicken Broth|
|2||Apples, peeled and cut into 1/2 inch pieces|
|1||Potato, peeled and thinly sliced|
|½ cup||Orange Juice|
|½ cup||Tomatoes, chopped|
|½ cup||Carrots, thinly sliced|
|1 tablespoon||Fresh basil OR 1 1/2 t dried|
|½ teaspoon||Curry Powder|
|Salt and Pepper to taste|
Combine all ingredients in a soup kettle. Cover and bring to a boil.
Simmer 20 - 25 minutes. Remove from heat and cool slightly. Process in batches, in a blender or processor until smooth. Reheat and serve.
