Yield: 2 Servings
|2 cups||Unsweetened apple juice or water|
|4||Thin slices fresh ginger|
|1||Lemon, organic preferred|
|2 teaspoons||Honey (optional)|
In a medium-sized saucepan, heat the apple juice and ginger. Juice the lemon and add, with the rinds, to the juice mixture. Bring to a boil and simmer for 5 minutes.
Strain through a sieve into 2 mugs, and sweeten with honey, if desired.
