|1 cup||All-purpose flour|
|1 teaspoon||Curry powder|
|1 cup||Chilled club soda|
|¼ pounds||Mozzarella cheese; coarsely grated|
|1 tablespoon||Finely chop'd fresh cilantro|
|16||Zucchini blossoms; pistils removed if desired *|
|Canola oil for deep-frying|
Mix together flour, curry powder, and salt. Add club soda; mix until smooth. Let batter stand 10 minutes.
In a small bowl toss mozzarella and cilantro. Stuff 1 tablespoon into each blossom, pressing ends of blossom closed.
Heat 1 inch oil in skillet (375ø F). Dip the filled blossoms one at a time in batter. Coat completely. Fry, turning once, until golden and crisp. Drain on paper towels; sprinkle with salt. Serve warm.
